Ingredients

  • 1 ½ cups basmati rice
  • 3 cups water
  • 1 large onion, thinly sliced
  • 2 cloves garlic, minced
  • 1-inch piece ginger, grated
  • 1 cup mixed vegetables (carrots, peas, bell peppers, beans)
  • 2 tbsp vegetable oil or ghee
  • 1 tsp cumin seeds
  • 1 tsp turmeric powder
  • 1 tsp garam masala
  • 1 tsp coriander powder
  • 1 bay leaf
  • Salt to taste
  • Fresh cilantro, chopped (for garnish)
  • Lemon wedges (optional)

Instructions

  1. Rinse the basmati rice under cold water until the water runs clear. Soak it in water for 30 minutes, then drain.
  2. Heat oil or ghee in a large, heavy-bottomed pot over medium heat. Add cumin seeds and bay leaf; sauté until fragrant.
  3. Add sliced onions and cook until golden brown, about 8-10 minutes.
  4. Stir in minced garlic and grated ginger; cook for another minute.
  5. Add mixed vegetables, turmeric, coriander powder, salt, and cook for 5 minutes until vegetables are slightly tender.
  6. Add the drained rice to the pot and gently mix to coat the rice with spices and vegetables.
  7. Pour in 3 cups of water, bring to a boil, then reduce heat to low, cover, and simmer for 15-20 minutes, or until rice is cooked and water absorbed.
  8. Once cooked, gently fluff the biryani with a fork, sprinkle garam masala on top, and let it sit covered for 5 minutes to allow flavors to meld.
  9. Garnish with chopped cilantro and serve hot with lemon wedges if desired.
