Ingredients
- 1 lb flank steak or sirloin steak
- 2 tbsp olive oil
- 1 tsp chili powder
- 1/2 tsp cumin
- 1/2 tsp garlic powder
- Salt and pepper to taste
- 4 large flour tortillas
- 1 cup shredded cheddar cheese
- 1 cup shredded Monterey Jack cheese
- 1/2 cup chopped cilantro (optional)
- Sour cream for serving
- Salsa for serving
Instructions
- Preheat a grill or skillet over medium-high heat.
- In a small bowl, mix chili powder, cumin, garlic powder, salt, and pepper. Rub this spice mixture evenly over both sides of the steak.
- Drizzle olive oil on the steak and grill for about 4-5 minutes per side, or until cooked to your desired doneness. Let it rest for 5 minutes, then slice thinly.
- Reduce heat to medium and place a tortilla on the skillet. Sprinkle half with shredded cheddar and Monterey Jack cheese.
- Layer some sliced steak on one half of the tortilla, then top with a little more cheese. Fold the tortilla over to enclose the filling.
- Cook for 2-3 minutes until the bottom is golden brown, then carefully flip and cook another 2-3 minutes until the other side is crispy and the cheese is melted.
- Remove from heat and cut into wedges. Repeat with remaining tortillas and filling.
- Optional: Garnish with chopped cilantro and serve with sour cream and salsa.
