Ingredients

  • 8 oz linguine pasta
  • 2 tbsp olive oil
  • 4 cloves garlic, minced
  • 1/2 cup white wine (optional)
  • 1 lb mixed seafood (shrimp, scallops, mussels)
  • 1 cup cherry tomatoes, halved
  • 1/4 tsp red pepper flakes (optional)
  • 1 tbsp fresh lemon juice
  • 2 tbsp chopped fresh parsley
  • Salt and black pepper to taste
  • 1 oz grated Parmesan cheese (optional)

Instructions

  1. Cook the linguine in a large pot of salted boiling water until al dente, then drain and set aside.
  2. Heat olive oil in a large skillet over medium heat. Add minced garlic and sauté until fragrant, about 1 minute.
  3. Add the mixed seafood to the skillet and cook until the shrimp turn pink and scallops are opaque, about 3-4 minutes.
  4. Pour in white wine (if using) and cook for 2 minutes to reduce slightly.
  5. Add cherry tomatoes and red pepper flakes; cook for another 2 minutes until tomatoes soften.
  6. Stir in lemon juice, cooked linguine, and season with salt and black pepper.
  7. Toss everything together until well combined and heated through.
  8. Remove from heat and sprinkle with chopped parsley and Parmesan cheese (if desired).
  9. Serve immediately garnished with extra parsley and lemon wedges if preferred.
