Ingredients
- 8 oz linguine pasta
- 2 tbsp olive oil
- 4 cloves garlic, minced
- 1/2 cup white wine (optional)
- 1 lb mixed seafood (shrimp, scallops, mussels)
- 1 cup cherry tomatoes, halved
- 1/4 tsp red pepper flakes (optional)
- 1 tbsp fresh lemon juice
- 2 tbsp chopped fresh parsley
- Salt and black pepper to taste
- 1 oz grated Parmesan cheese (optional)
Instructions
- Cook the linguine in a large pot of salted boiling water until al dente, then drain and set aside.
- Heat olive oil in a large skillet over medium heat. Add minced garlic and sauté until fragrant, about 1 minute.
- Add the mixed seafood to the skillet and cook until the shrimp turn pink and scallops are opaque, about 3-4 minutes.
- Pour in white wine (if using) and cook for 2 minutes to reduce slightly.
- Add cherry tomatoes and red pepper flakes; cook for another 2 minutes until tomatoes soften.
- Stir in lemon juice, cooked linguine, and season with salt and black pepper.
- Toss everything together until well combined and heated through.
- Remove from heat and sprinkle with chopped parsley and Parmesan cheese (if desired).
- Serve immediately garnished with extra parsley and lemon wedges if preferred.
