Ingredients

  • 4 large potatoes, peeled and grated
  • 1 small onion, grated
  • 1 large egg
  • 1/2 cup all-purpose flour
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1/4 tsp nutmeg (optional)
  • 4 slices bacon
  • 2 tbsp butter or oil for frying
  • Sour cream (for serving)
  • Fresh lingonberry jam (optional, for serving)
  • Chives or parsley (optional, for garnish)

Instructions

  1. Place the grated potatoes in a clean kitchen towel and squeeze out excess moisture. Transfer to a large mixing bowl.
  2. Add grated onion, egg, flour, salt, pepper, and nutmeg (if using) to the bowl. Mix until well combined into a batter.
  3. Heat 1 tablespoon of butter or oil in a large skillet over medium heat.
  4. For each pancake, spoon about 1/4 cup of batter into the skillet, gently flattening it with the back of the spoon to form a thin round.
  5. Fry the raggmunk for about 3-4 minutes on each side, until golden brown and crispy. Repeat with remaining batter, adding more butter or oil as needed.
  6. While the pancakes are cooking, fry the bacon slices until crispy. Drain on paper towels.
  7. Serve the raggmunk hot, topped with crispy bacon, a dollop of sour cream, and optional lingonberry jam and chopped chives or parsley.
