Ingredients

  • 250g paneer, cubed
  • 3 tbsp butter
  • 1 tbsp oil
  • 1 large onion, finely chopped
  • 2 medium tomatoes, pureed
  • 1/4 cup cashew nuts
  • 1/2 cup heavy cream
  • 1 tbsp ginger-garlic paste
  • 1 tsp garam masala
  • 1 tsp red chili powder
  • 1/2 tsp turmeric powder
  • 1 tsp cumin seeds
  • Salt to taste
  • Fresh coriander leaves for garnish

Instructions

  1. Soak cashew nuts in warm water for 15 minutes, then grind into a smooth paste and set aside.
  2. Heat 1 tablespoon of butter and oil in a pan over medium heat. Add cumin seeds and sauté until fragrant.
  3. Add chopped onions and cook until golden brown. Stir in ginger-garlic paste and cook for another minute.
  4. Pour in the tomato puree and cook until the oil separates from the masala, about 8-10 minutes.
  5. Add red chili powder, turmeric, garam masala, and salt. Mix well and cook for 2 minutes.
  6. Stir in the cashew paste and cook for 2-3 minutes to enhance richness.
  7. Add the remaining butter and mix until melted into the gravy.
  8. Gently fold in the paneer cubes and cook for another 5 minutes, allowing the flavors to meld.
  9. Pour in the heavy cream and simmer for 3-4 minutes, adjusting salt if needed.
  10. Garnish with fresh coriander leaves before serving.
