Ingredients

  • 2 lbs lamb shoulder, cut into chunks
  • 2 tbsp olive oil
  • 1 large onion, chopped
  • 3 cloves garlic, minced
  • 1 tsp ground cumin
  • 1 tsp ground coriander
  • 1 tsp ground cinnamon
  • 1/2 tsp ground ginger
  • 1/2 tsp turmeric
  • 1 cup chopped dried apricots
  • 1 cup chicken broth
  • 1 can (14 oz) diced tomatoes
  • 1 cup carrots, sliced
  • Salt and pepper to taste
  • Fresh cilantro for garnish

Instructions

  1. Heat olive oil in a large pot or tagine over medium-high heat. Add lamb chunks and brown on all sides, about 5-7 minutes.
  2. Remove lamb from the pot and set aside. In the same pot, add chopped onions and cook until translucent, about 5 minutes.
  3. Add minced garlic and spices (cumin, coriander, cinnamon, ginger, turmeric). Cook for 1 minute until fragrant.
  4. Return the browned lamb to the pot. Stir to coat the meat with spices. Pour in chicken broth and diced tomatoes. Bring to a boil.
  5. Lower the heat to a simmer. Cover and let cook for about 1.5 to 2 hours, or until the lamb is tender.
  6. Add chopped carrots and dried apricots. Continue simmering uncovered for another 30 minutes, until vegetables are soft and flavors meld.
  7. Season with salt and pepper to taste. Garnish with fresh cilantro before serving.
  8. Serve hot with couscous, rice, or crusty bread to soak up the flavorful sauce.
