Originating from the Levant region, shawarma has gained worldwide popularity for its bold flavors and versatility. The name 'shawarma' comes from the Turkish word 'çevirme,' meaning 'turning.' Traditionally cooked on a vertical rotisserie, modern home recipes like this one bring the same delicious taste into your kitchen, perfect for quick weeknight dinners or festive gatherings.

Ingredients
- 1 lb boneless, skinless chicken breasts, sliced into thin strips
- 3 tbsp olive oil
- 2 cloves garlic, minced
- 1 tsp ground cumin
- 1 tsp ground paprika
- 1/2 tsp ground turmeric
- 1/2 tsp ground cinnamon
- 1/2 tsp cayenne pepper (optional, for heat)
- Salt and black pepper to taste
- 4 large pita or flatbreads
- 1 cup chopped lettuce
- 1 cup chopped tomatoes
- 1/2 cup diced cucumbers
- 1/2 cup tahini sauce or garlic yogurt sauce
- Lemon wedges, for serving
Instructions
- In a large bowl, combine olive oil, minced garlic, cumin, paprika, turmeric, cinnamon, cayenne, salt, and black pepper to make the marinade.
- Add the sliced chicken to the marinade, toss to coat evenly, and let it marinate for at least 30 minutes, or up to 2 hours for more flavor.
- Heat a large skillet over medium-high heat. Add the marinated chicken and cook until browned and cooked through, about 5-7 minutes.
- While the chicken cooks, warm the pita or flatbreads in a dry skillet or oven until soft and pliable.
- Once the chicken is ready, assemble the wraps by spreading some tahini or garlic yogurt sauce on each bread.
- Distribute the cooked chicken evenly onto the breads, then top with chopped lettuce, tomatoes, and cucumbers.
- Roll up the wraps tightly, folding in the edges as needed to secure the fillings. Slice in half if desired.
- Serve immediately with lemon wedges on the side for an added burst of freshness.
