  • 2 tbsp vegetable oil
  • 1 large onion, finely chopped
  • 3 cloves garlic, minced
  • 1-inch piece of fresh ginger, grated
  • 2 medium tomatoes, chopped
  • 1 can (15 oz) chickpeas, drained and rinsed
  • 2 tsp ground cumin
  • 2 tsp ground coriander
  • 1 tsp turmeric
  • 1 tsp garam masala
  • 1/2 tsp red chili powder (adjust to taste)
  • 1 tsp salt (or to taste)
  • 1/4 cup chopped fresh cilantro
  • 1 cup water or vegetable broth

Instructions

  1. Heat the vegetable oil in a large pan over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes.
  2. Add the minced garlic and grated ginger; cook for another minute until fragrant.
  3. Stir in the chopped tomatoes and cook until they soften and the oil begins to separate, about 8 minutes.
  4. Add the ground cumin, coriander, turmeric, garam masala, red chili powder, and salt. Cook for 1-2 minutes, stirring constantly to toast the spices.
  5. Add the drained chickpeas and water or vegetable broth. Mix well to combine all ingredients.
  6. Bring the mixture to a boil, then reduce the heat to low and simmer uncovered for 15-20 minutes, allowing flavors to meld and sauce to thicken.
  7. Taste and adjust seasoning if necessary. Garnish with chopped fresh cilantro before serving.
